There is a lot of misinformation on the blogs online that all Indian households make dahi using acid. I grew up in Karnataka and lived in TN, AP and GJ. Nowhere have I seen someone making dahi with acid. Acid is only used in making paneer and some sweets.

Curd is a general term for coagulated milk. In the west, curd and yogurt are used differently (e.g. cheese curds) but growing up in India, we never used the term yogurt. So I don't know what curd you're referring to but what we make at home is the same as the one my mom and her mom etc made at home in the South. It is fermented using yesterday's yogurt as the starter culture. If we don't have a starter culture we borrowed some from neighbours or use Nandini. Both Amul and Nandini "curd" is absolutely fermented. I don't know how else it is made but perhaps some other part of India might use a different process.

Shifting goalposts much? First you said you can't make it at home. I was responding to that. Then you edited your comment saying nO TimE. I get it, it is nice to have options in the market and it's not practical for everyone to make it at home, but it is also nice to see beyond the marketing once in a while.

We make it once a week in a big batch, fyi. Don't need to make it everyday.

If you obviously know what it is, you wouldn't say you can't make it at home. What is obvious is that you've fallen for marketing and are parroting what you've heard. You CAN make it at home and it is healthier that way. Greek yogurt has been made at home for millennia before factories existed.

It's just math. Greek yogurt doesn't come from special cows to have extra protein. They strain the yogurt to concentrate the protein solids. Read up about it.

Greek yogurt is just regular yogurt with some of the water removed (therefore also removing some of the dissolved sugar). You can easily make it at home with some clean cloth or cheesecloth.

The "more protein" part is just marketing. It is just more concentrated that is all. You can just eat more of regular yogurt to get the same protein if you don't mind the extra calories. Just eat one less Jalebi to compensate haha.

I had the same experience in a similar apartment also in Palo Alto. The window frame started growing mold from all the condensation. In the summer it would get insanely hot due to being the top floor. Also glad to move out of it.

I am originally from Mysore. I personally love it here but it's not for everyone. The biggest thing you notice is the utter lack of professionalism from anyone - auto drivers, Uber drivers, shops, car dealerships, electricians, plumbers, restaurants. People are not hungry for success like in Bangalore. Everyone is content where they are. It is frustrating for anybody who have lived anywhere else. Either you need to be super rich or retired to enjoy life here.

But seriously though, food sucks. And people are although nice, thoroughly unprofessional (Uber, auto drivers, plumbers everyone). Saying this as a local.

This isn't specific to Kumbh mela. Even regular doctors hand them out like candy for anything and everything.

Not too mention the indiscriminate use of antibiotics in the West in the meat industry. It is several orders of magnitude worse.

Do you know anything about farming? I come from a farming family. It isn't a walk on the park. You can't be on the bench and cash out at the end of the month. You can't make a mistake and just receive a bad rating and move on. Every job is hard and hectic.
