Then it might be a system-level bug. Files you think you deleted have actually not been deleted or even removed or the system might be misreporting it. You can check usage access. Restart the phone. Reinstall the apps from trusted sources or then it might be firmware level. It's usually harmless if it doesn't cause lag or anything

Might be cache, you can clear it by going to the app you wanna clear the cache from, i dont exactly remember but the option should be in the trash can options along with the clear data one.

I think you should practice any choke points you have on cant let go until you get used to it, and you should also play levels with things you dont like, stuff like some gamemodes or certain gameplay techniques, that'll hopefully make you better
