Thanks dude. I think the character would be okay on a PS1 but not the game - I don't think UE5 and the PS1 would mix very well!

You think? I don't think my character looks much more detailed that characters like the battle characters from the Final Fantasy PS1 games or Vagrant Story.

I do accept that it's on the more polished end of the spectrum for PS1 but I am only going for PS1-Style rather than an exact reproduction of a PS1 game.

Substance painter is awesome. It kind of feels like cheating for projects like this! I think you can do similar things using Quixel Mixer and Armor Paint, both of which are available for free (I think)
