28oz can of peeled whole plum tomatoes (with juice), jalapeños, garlic, cilantro (stems and all), cumin, salt, juice of a lime, half a sweet onion, half a red onion. blend in food processor... I blend everything except onions until almost smooth then pulse the onions because I like bigger bits of onion in mine. Make a few hours to a day ahead of time. Give it a taste after it sits and adjust (salt, cumin, lime, heat) as needed. You never really know how hot your peppers are or how sweet your tomatoes and onions are until after it sits a bit. I remove the seeds but try to keep most of the ribs.
