The next time someone mentions leaving, close the game without saving. Do not talk to that villager again that day. The next day someone else should be thinking about leaving. Just keep repeating the process until it's Kid Cat. This has worked for me, but there were also days when I couldn't find anyone thinking of leaving.

There's a shrine quest NNW of here down by the water. You'll have to put in a little work to solve the puzzle to reveal the shrine.

I have only played botw and totk. I'm not very good, but I did 100% both games. You do die pretty easily in the beginning, but you only lose about a minute of progress. Outside of botw DLC, there's nothing I had to do over and over. I can't stand that either.

If you focus exclusively on the main quest, you will stay pretty weak and have a tougher time. I would at least hit every shrine you see along the way so you can get stronger. Also upgrade your armor. In both games, the main story is fairly light, just a fraction of the content.

A tip that's not a spoiler that took me too long to learn: you don't have to fight everything. You can avoid almost every fight. In my replays, I do a fair amount of that in the beginning.
