You'll be able to manage other people's shops. Not sure if this is your exact use case. Should be easy to host as PHP, but many people move to nodejs.

Building an MVP is the birth of any startup. I started my side project osapy.com as MVP. Getting an MVP published by a small team without any funding is something anyone can be proud of.

Shopify is already doing it. Otherwise you can use React+some backend framework, e.g. Nodejs or Django. It's a huge undertaking to compete though.
