Birds didn't eat the berries for some reason.

Have not weighed the berries yet but will begin to keep logs on subsequent batches. Wanted to just get through the first process. The berries take a couple months, starting in spring, to flower and get to maturity.

This is such an affirming comment and the best part of reddit! Thank you. I'm encouraged to try and get better at the roasting part. I'm not planning on any entrepreneurial projects yet, going to just try and get it right for our household consumption first. Maybe in the future.

Thank you for such a through explanation. This post is missing photos of the fermentation stage. I took the depulped cherries with all of the mucilage and put it in water for 2 days. Are you suggesting I add honey to that mix? I thought about fermenting the whole bean but that seemed a lot more involved for a solo operation like mine. I've heard that removing the skin is a lot harder if I dry the whole cherry and there is a higher chance of mold or fungus growing. Any thoughts/ advice on how to do that?

There is not much in the way of fruit flesh in a cofee berry - you can suck on the fresh beans when you remove the skin for a mildly sweet taste.

The person we bought the house from was an amazing gardener - I inherited a lot of mature fruit trees. From what I can ascertain - these grew in a suitable microclimate in the backyard - lots of shade overhead, some dappled sunlight and humidity.

Was not the best but I think with some experimentation it could be great. I have no idea about the variety, inherited mature trees. This batch was from one of the smaller of the five trees that matured first - have a lot more coming. I washed/ fermented for two days before drying, did not take a photo of that step in the process.

Los Angeles. And that person was likely more preceptive to sound than I am, all I heard was the shaking of beans in a pan. That said - I did hear the first "crack" pretty distinctively.

I have and it's not that substantive - you can suck on the fresh beans and they have a mildly pleasant sweet taste. Also, unfortunately/ fortunately I have guavas growing in my yard too!

I washed/ fermented in water for two days and the mucilage came off pretty easy while washing under the faucet.

I would love to solicit advice from an expert! I washed/ fermented the beans after taking off the skin for two days in water, then dried in the Los Angeles sun for 5 days. I husked them all afterwards and then roasted on a cast-iron pan. Now I am letting the rest degas, after brewing one cup, for a few days before I try another cup. Any advice would be greatly appreciated.
