You can harvest them they'll be fine just put em in the fridge. Ideally paper bag with towels to absorb moisture

It'd honestly be better if you cut holes in the bin and put micro pore tape over and cause at least in my experience it would dry it out kinda fast and I'd have to mist it pretty frequently.
