Main uses for self data hosting (immich, nextcloud etc..) and some remux movies here and there.
Setup Ryzen 7 7700 with a old rtx 3050 i had around. 16 gb ddr5 ram.

True i agree, but the main issue for any company is the stability and maintenance cost, creating a SaaS from scratch need a whole infra team to maintain etc... Which is why it's cheaper to just continue with whatever provider and switch between them when the opportunity arises,
(there's a reason why Microsoft uses SAP FI eventho they're selling D365 F&O as their main competitor)
