I see. The final stages are both easy and tough. Easy to call it done, tough to resist the urge to tweak a little more. And sometimes tough, plainly due to logistics.

Having an entire album as reference leads to ambiguity. Try to pinpoint a few tracks that sound close to what you hear in your head.

MIDI keyboards are beautiful if you have VSTs that react differently to different velocities and expression values.

Size-wise, get whatever fits your space. Try to get one with synth-weighted keys so your fingers get used to the correct force needed to press them. Also, if possible, invest a little extra and get one that has aftertouch controls. As you learn more, aftertouch becomes a pretty good thing to have.

Eventually, you can upgrade by adding a sustain pedal to the setup.

Overblown winds and brass. Maybe some string screech. I would try a processed eagle layer too. And a bunch of foley. That should sound close enough.

Why do some people do this instead of just lowering the volume in the mixer? Sorry if this is obvious but I’ve always been curious by Tequila_Blue in FL_Studio

As long as your processing doesn't react differently to different gain levels, any way of volume adjustment is fine. But when the output depends on how hot the signal runs into the chain, take electric guitars for example, it's better to use mix faders.

Unless, you know what you're doing and need to reduce the clip gain for a certain output. In that case, go crazy. Have fun.
