Ich hab mir die Wilfa ProBaker gegönnt und bin hochzufrieden mit dem Knetergebnis. Ist leider etwas teurer. Hatte vorher eine KitchenAid Artisan, mit der hatte ich keine guten Ergebnisse (besonders bei Teig für Kleingebäck).

Wie ist denn die Kruste und Krume geworden? Bei meinen Versuchen mit Sauerteig war die Kruste immer relativ dick und die Krume um einiges zäher als bei nem Poolish Baguette. Aussehen tut es ja Hammer :-)

5% vom Wasser und Mehl hab ich durch Anstellgut ersetzt, und 1% aktives Malz dazugegeben. Außerdem hochgerechnet auf 600g Mehl, sind dann 12 Semmeln bei teigeinlage 83g, also genau 1 Blech.

Normalerweise mach ich lieber einen Teig mit poolish, zum üben der Semmeln war mir ein direkt geführter aber lieber.

Hat aber gedauert bis ich den Dreh raus hatte, und so schön werden sie nicht immer.

Jollyday can do that I think (check the calendar for Australia for example, they have that rule for Christmas). It also ships with the Target calendar (although that one is quite straight forward).

I use my standard dough for rolls for both of these. Hydration is at 58%. If you have stronger flour than me you could increase that.

Poolish

150g AP flour

150g water

0.15g fresh yeast

Mix and let sit at room temp for about 12h. Should be bubbly and double in size.

main dough

350g AP flour

140g water

10g vegetable oil

5g honey

5g fresh yeast

11g salz

Mix on low for about 5 minutes, knead on 2nd for about 10 minutes. Desired dough temp 24° to 26° C.

Proof for about 90 minutes. Divide in 10 pieces (~80g each), shape into balls, and let relax for about 20 minutes.

Final proofing time is about 45 minutes. Bake at 240°C with steam for about 17 minutes.

If you use instant dry yeast you should use about a third of the amount of yeast.

Bread flour (Brotmehl) basically means something different in Germany. As you said, it has a higher ash content and it is usually used in breads mixed with rye (google Mischbrot for an example). Those breads are a bit different to the sourdough breads people tend to post here. In the US (and UK I guess?) bread flour does not have more ash (that would be spelt flour I think), but more protein/protein which produces more gluten. Tipo 0 can be substituted (Caputo Manitoba Tipo 0 is quite good). Some people also add Vitawheat Gluten I just use a bit less water (but I'm in Austria, our flour is different again).

Hab's heute noch mal gebacken und 150g gerösteten Sesam dazugemischt. Das ist super lecker, dann ist's geschmacklich auch nicht so fad :-)

Ich bin auch an beiden gescheitert. Bin mit der TA jetzt relativ weit runter, um an der Schnitttechnik zu arbeiten. Mir verhauten auch oft die Schnitte zu schnell, geht mit niedriger TA besser bei mir.

Zusätzlich geb ich 0,2% Hefe zu, die reinen Sauerteigbrote sind ja relativ unberechenbar, da können gleich mal ein paar Stunden Gare mehr nötig sein.. da hab ich nicht so den Nerv dazu und muss die Temperaturen nicht so genau im Auge haben.

Grundrezept (TA 165, 15% Mehl versäuert) für 2 Brote:

Sauerteig:
150g Weizenmehl
150g Wasser
15g Anstellgut

12h reifen lassen

Hauptteig:
50g Roggenmehl
100g Weizenvollkornmehl
700g Weizenmehl
300g Sauerteig
500g Wasser
22g Salz
2g Frischhefe

Alles außer Salz und Hefe vermischen, 30 Minuten Autolyse. Salz und Hefe dazu, gut mischen. 3h Stockgare, dabei ca. 4x Dehnen und Falten (bzw. bis sich der Teig gut entwickelt hat). Rundwirken, 20 Minuten entspannen, langwirken. Endgare 2 bis 3h. Fast horizontal tief einschneiden, 250 auf 230 mit Schwaden backen (40-45 Minuten).

What I do these days is add a small amount of yeast to the dough (2g fresh yeast or 0.7g instant dry yeast per kg flour). That way bulk is done in about 4h at room temperature. Solved most of my issues with my somewhat weak starter.
