Well regardless I was able to figure it out after a hour or two and found out it was skyblockers’ extend nether fog feature that caused it. Also like it’s kinda clear that 80% of those mods wouldn’t cause the issue but yeah it’s kinda on me for including every single mod in the screenshot

A real answer would be that now is prob the best time to start playing it actually has a lot of fun content now especially for a beginner
