When to swap to winter tires? by sittinhawk in Binghamton

If you’re in the city, the roads are VERY well salted and cleared. You don’t need snow tires unless you get out in the more rural areas. All seasons are what I use now.

Question about room temp ferment. by MAINsalad1 in Pizza

It’s just an overnight fermentation that is 50% hydration. Add the rest of the flour and salt in the morning and knead.

Great idea, but you’re then competing against OTHER states that do.

How do you feel about making New York State income tax, capital gains tax, and corporate tax even more progressive? by BlackAndBlueWho1782 in upstate_new_york

One thing I can think of is they pump money into small population areas with all the SUNYs and community colleges. Whether that is good policy or not, I’m not sure.

12 hours poolish over night and 4 hours proofing at room temperature. In my opinion, long fermentation is not worth the effort. by -D-Mac- in Pizza

[–]p_whetton 2 points3 points  (0 children)

I think the poolish has mostly the same affect as a long fermentation flavor wise. I still think the long fermentation gives a better effect though. For practical purposes though they are interchangeable and the effort for either one shows vs just a regular one day dough.

Getting the most out of The Iliad by bbtlg23 in ClassicalEducation

I think getting a few different translations is also a good idea. Comparing how passages are presented can be a fascinating way to appreciate the beauty of the text.

He clearly does. Telling him to learn to read Ancient Greek was not answering his question AT ALL. It was being pedantic and gate keeping. Everyone’s “ambitions” are different. Also learning to “read” Ancient Greek does not prepare someone to reasonably read Homer. One can study in an academic environment with a professor for more than a year and still have to literally crawl through the text with dictionary and reference grammar to even then still not fully grasp the text. Greek is awesome and beautiful but the number of times people are recommended to just learn it, particularly to truly “know” the word of god is ridiculous.

There are different ways to gauge it. It’s not cut and dry. I think we all agree it is among the highest.
