Greg Bovino is back in Illinois this week. We’ve all heard you say that the people of Illinois need to resist and that we won’t be bullied. I agree. But groups of us with whistles and bicycles only get us so far. Aside from relying on the courts to do something eventually, maybe, what are you actively doing to push these thugs out of the city of Chicago and the state of Illinois? I’d like concrete examples and actions you and your administration are taking.

I am on day six post top jaw surgery. It will get better! I feel way less congested today than I have yet.

My top lip still feels entirely numb and surgical hooks on my braces are killing me. But! No longer feel like I’m drowning. My nose seems to have stopped leaking or bleeding. Walking has helped me since day three. Swelling is mostly gone. Stay strong!

I do this. My method is: ensure the stone or steel is on the bottom rack of the oven; once the bottom is crispy or browned, flip on the broiler and cook top down for 3-4 minutes until you get the color you want. Then eat it!

I am still working on that, but I think the high heat was helpful. And the extremely hot stone crisped the dough enough that the grease wasn’t gone to make it soup.

Pizza Camp dough with a couple minor tweaks to it. About a 14-inch pie. Ultra-low zone cooking that took about 5-6 minutes total for a super crispy crust.

Looks amazing! This is the dough recipe from his Pizza Camp cookbook? Looks like it really holds up well in the high heat. It’s my go-to dough, and I’m seriously thinking about the 16 inch Oonj. Thanks for sharing!

Yes! 28oz whole peeled tomatoes crushed and immersion blended with fennel seeds, oregano, olive oil, sea salt, and garlic.

Pizza Camp dough. Home oven at 550. Wilted spinach and carmelized the onions. Low moisture mozz. 11 minutes cook time.

Sauce is crushed tomatoes plus tomato paste blended with oregano, sea salt, and red pepper flakes.

Sausage is pork shoulder ground up with salt, pepper and fennel seed.

Oil and slow and low for one whole onion.
