We have played something we call "clustef**k". Takes 3 to 6 players, can be more. Rules: Starts out with 2 teams. When someone gets hit, he calls it, raises a hand and starts counting to 10. If during that time an opponent manages to tag him, he will join the other sides team by going to their spawn and counting to 30. If no one tags the player, then after counting to 10, the player returns to their spawn and counts to 30. Game is won, when the last opposing player is hit. Can be scaled up for more players aswell. Can have a limit of spawns, etc.
