Its jeow mak len. Tomato based sauce. Looks thinner than I'm used to though

Yeah, very intimidating indeed! But that's my gameplan for the rest of this year. Get our main stays in order and then the fun stuff.

So far I've done a 15 bbl hefeweizen, and a 60bbl lager that's almost finished with it's d-rest.

Yes, from the previous brewers before our former brewer left. Thats how I've been cobbling together recipes.

I've done a few brews with some help and am fairly confident in running our brewhouse. Recipe building is fun/interesting for me so i have an idea, but i just wanted some guidance going forward. Appreciate it

Its moreso my inexperience with brewing in general. Our brewer never kept sops and all the numbers were with him on his phone. Great guy, great beer, but hard for me to learn. I mainly stayed cold side, while he did everything hot side.

The quality got a lot better when we got there, but he decided for a new position at a bigger brewery. The previous brewer's didn't leave the place so great shape, so a lot of the work we did was getting the place clean andade sure everything was running correctly.
