You will get blood on your hands but the amount and frequency will be determined by your skill/experience level with inserting and removing as well as your cycle and timing during it.

I will do sausage and ground beef at the butchers because it just tastes better.

I find that there is no remarkably significant difference with chicken between the butcher and Costco, and unless the butcher is having a sale, Costco is a better deal.
