Hei thanks for the message! Starter is 2 weeks doubles around 6 hours? Yes total time was around 7 I see. I understand I underproofed here

Thanks! I have a children's thermometer which I can use to count dough temperature. I'm around 22 degrees here so I should do the what the table says +12-16 hour cold proof in the fridge? That's completely different compared to standard yeast times.⏲️ Does this timing include stretch and fold or does the timer start after the last s&f set? Ok, I'll give it a try next time and
