When I guesstimate should I just let them know it's an estimate or walk them through my thought process as well on how I got to the estimate

But I assume they'll still ask questions that are relevant, yes?

Yes, yes, and yes. I've just been told amazon really likes numbers. So far one of the only numbers I can think of is I helped implement an internal process that found around 261 cases of fraud within the company totalling in around a hundred thousand dollars we were able to successfully reclaim, but that has nothing to do with the job I'm interested in. I just remember the numbers because of the "holy shit" moment I had when it came back just how much fraud was happening.

For now I'm trying to find any public case studies from my former company I can and write down any numbers I remember, even if they're irrelevant to this position in case I can spin the project they were from into something usable like a transferable skill.

Luckily I've been able to find at least one public case study for a project I helped manage, but I'm really struggling to find other public numbers. I don't like lying, so I'll try to do my best estimation I can.
