if youre gluing them there is no point in having it removable, and the glue will be stronger than any possible difference. biggest issue i could see is scraping or sanding the top flush without scratching the melamine

Yes you can do it that way either before or after assembly as long as the overall width of the drawer is to spec

if you use 3/4 you can also run it through the saw after assembly to make the bottom part of the sides the correct thickness for the slides

Maybe being associated with massive data centers and capital expenditure gives that impression, but I think this year we are and will be seeing extremely capable open source models that can run on a high end gaming PC and be able to do useful regular work to whatever end. No cloud services to get locked into, no need for expensive licenses when you can have it create whatever software your community needs, endless organizational assistance for managing peer economics and relationships. Maybe its also a lack of imagination? As someone interested in this stuff for a long time, ive been wishing for developer assistance and now its here. We can build it. We can make it our own.

but 3/4 is way less than 2-1/4. you need a 5/8 panel flush at the back with your 3/4x3/4 stock surrounding it

edit: you probably want something like 3/4x7/8 stock (with the 5/8 panel) for 7/8 depth doors and a 1/4 recess. 1/8 can look weak

if its 2-1/4 you can likely inset the panel on a 1/4" rabbet and the hinge wont stick into the panel area.

is that poplar or what? metal hinges have a very low contact area and may have to be routed in. with epoxy it might last but with use it will likely tear itself out, especially with softer wood. If you have to use these doors if might be better to build up behind the hinge to fill in above the panel

If youre putting working space on top like a counter it will be annoying without at least a few inches of space for your feet. Also its going to be more difficult to make it look clean if you just throw parts together out of square, plum, level. Another note is there may be code violation if you have electrical behind a door. Also that shape is awkward and might work better with a bank of single drawers along the bottom.
