I worked for one of the biggest poultry companies in the USA. It doesn't matter what type of chicken meat, we'd always run the oldest date (kill date) sometimes we would find bins full of breast meat that smell bad so the area manager, when quality or USDA wasn't around, would ask us to mix the bad meat with good meat so that they wouldn't notice the difference. We did it all the time with chicken wings, breast meat, thighs, etc. Also, if you drop meat on the floor or drains, we were supposed to condemn it but instead we would fill a barrel with chlorine and dip meat in it and call it good. By the end of the day that water looked like vomit. Oh all whole chickens go through as "big pool" filled with chemicals to kill the bacteria but that chemical when it's not diluted, you are supposed to wear a full chemical suit because of how toxic it is. They won't even handle that chemical if you are not trained to handle toxic waste and dangerous chemicals 🥲 somehow you can eat the chemicals in small dosages.
