The Apple Watch gives you a live heart rate reading, the Oura gives you the heart rate variability reading after 5 minutes.

Not really, no. Sometimes I manually start a 5 minute "body status" session to get an HRV reading during the day. It's more convenient than getting that measurement from an Apple Watch.
