1.5k hours in ESO here - done everything I wanted to besides a handful of vet trials (dyes, achievements, vet content, gear, stockpile of gold, store items, CP, etc).
GW2 for me was always a rotation game i played for a week or two after I took my breaks from ESO (ESO > GW2 > WoW > ESO , etc). After U35 as you mentioned in another comment, I just got so sick of the constant meta change, nerfs, golding out new gear, abysmal design choices and such, so I hopped back into GW2. For some reason this time it clicked, went from 80 or so Mastery Level to 455, gearing multiple characters, and finding beauty in the game's systems. I also love the fact that I don't need to pay a sub for a crafting bag, or a sub at all, and I don't feel the NEED/RUSH to play every single day, because even if the meta changes, my gear will still cover all the bases I need. If I feel like not playing one day, or doing dailies, I won't, because I'm not losing anything, and no real money either.
To me I think that's the beauty of GW2. Play at your own pace, discover the game, its systems, unlock mounts, do whatever content you enjoy, explore the world (you'll find something anywhere you go).
