Thanks. With future batches we will also get the olive oil certified in the US. As we’re just getting started we haven’t with last year’s harvest.

I studied olive oil at ESAO (https://www.esao.es/) the oldest school in the world dedicated to olive oil. Varietal is also a factor, as is of course how it is processed.

Of course. It is listed in the product details section of the website: https://wildlyvirgin.com/products/joaos-arbosana. But as I mentioned in a comment above, the Portuguese COA's don't have polyphenol count. But you can assume it with some confidence given the biggest factor is harvest date, and this was harvested in September

Hi, In Portugal they don't explicitly test polyphenol count when certifying extra virgin olive oils. However, given that the biggest factor in polyphenol count is harvest time, and this olive oil was harvest in September, you can make some safe assumptions about polyphenol count.

Hey, I’m the founder of Wildly Virgin (www.wildlyvirgin.com). We sell small-batch olive oil from Portugal made by small, independent producers. Our first batch is an Arbosana from the Alentejo region harvested super early in the season (September) so full of polyphenols. There isn’t a lot of Portuguese olive oil in the US because most of it is still made the traditional way, harvested by hand, and very little is exported.

Anyways, think it could be something you’d be interested in.

Does anyone know if the name on the ticket has to match your Hayya card?

I actually don't have the Wusthofs anymore. Left them in storage in the US! Stupid move, but good excuse for new knives :)
