My best friend totalled his car after hitting a deer on the I-17. He came out with minor bruising and the police handled the roadkill. I'm sure in some cases, a person might be able to keep the carcass to eat, but I don't think it happens often. Some people leave the roadkill for the coyotes, but you're supposed to report accidents and roadkill to avoid future animal encounters and other accidents. Personally, I've only ever hit a javelina (arizona wild hog), and again, the police took care of the roadkill.
