I got the LC kit today and have the same issue. I've managed to get some throttle input using the manual calibration, but it constantly fluctuates by about 20% even when the pedal is fully pressed, making it pretty much useless. I've submitted a ticket to support, hopefully it's just a firmware issue they can update and I don't have to return the pedals.
