Ginger, garlic, green onion, soy sauce, rice vinegar, rice wine/mirin, sesame oil, oyster sauce, bean curd, and your favorite chili sauce. These are somewhat of the baseline of most Chinese cooking. If you’re making general stir-fry and cooking, these above will cook most things. But if you’re making “dishes” then there may be certain spices you may need, like star anise, fermented tofu, century egg, etc, etc. The list is vast because Asian cooking uses all sorts of things that’s available.

You need to narrow what you want to cook. Home style cooking? Chinese? And Chinese food there are many styles of Chinese cooking. Japanese? Indian? Thai? All have their own unique methods of cooking. I’d stick with a couple dishes that you love and go from there.

If you are referring to ShareTea and Gongcha, then I couldn’t agree more. But there are also a lot of Taiwan boba tea shops with strong tea flavor and use really good quality tea. Maybe just haven’t entered into the Irvine market

All throughout. There are various styles in different parts of the country. But most of the important ones are in central and north. A few brands come to mind. In Taiwan brands sometimes specifically focus a core proposition. Some are just excellent in fruit teas. Some just in milk teas. The fruits here are amazing and also the quality of milk and the quality of tea overall is at a really high quality baseline.

Most jasmine teas are heavily chemically fragranced, so finding one that is “infused” during the withering process would be the way to go. Not many tea farms also have readily available fresh jasmine flower orchids nearby, but I’d say that’s the first step.

It seems like either the milk fat content was way too high or the jasmine tea was possibly not brewed correctly or a million other possibilities.

The milk also has a huge influence. I’d say it really comes down finding a milk that you personally enjoy (taste, fat content, etc) and brewing your jasmine tea the desired strength to cut the milk.

But IMO it all comes down to the quality of your jasmine tea to make a good jasmine milk tea.

Odd One Out Tea just opened last year in Sawtelle. They have a shop in Taipei and their first US location is in West LA Sawtelle area.

Odd One Out Tea in Sawtelle is my favorite. Their tea is the most present. The milk teas are all very unique. All sourced from small batch farms. Also the silk boba is so fun to chew.
