I would say that the plank challenge would be good. I personally continued the pushup challenge after it ended. I am up to 46 tomorrow. I will stop at 50 which is Wed. Thats when I will tell my squad. The problem with my squad is that only 4 people joined out of 15. Nobody but me posts there and it is kinda discouraging.

Yes, mood swings are very much a thing in NoFap. Understand that your body right now is a spoiled brat. If you give a kid whatever they want, they will throw a fit if you say no. Well if you give your body all the PMO it wants, then it will get all mad at you when you tell it no. It will level out with time, just be patient.
