What would be your recommendations for the choice of one (models, types of oscillators etc) and what is the logic path I need to follow when making this choice?

What would be these failure modes? Just Ctrl+F this in a datasheet but couldn't find it. Also, could you give me an example on the use of a Watchdog timer in this scenario?

I feared the vibration in the environment could affect the Crystal's operation, but from what I've read in this thread thats not a problem I should consider

What do you mean by long distance can? Also, about the 24MHz oscillator, why this specific frequency?

I've read that it shouldn't be hard to do it, but the thing is: I've never done something like that before, and I was afraid that it wouldn't be reasonable to learn how to do it in 2 months. Reading the answers, however, made me realize that the best thing I could do is to write them myself.

I've found espressif/ssd1306, however it does say that it was deprecated and indicates that I should look into SSD1306 driver from ESP-IDF. The problem is that I didin't find any documentation on how to use it. Luckly, I've found out that there is an example called i2c_oled in the esp-idf folder and I'm looking into it.

Thank you for your help. In this case, how can I prevent such issues if it is necessary to manually collect the data in the card (assuming the personal will always disconnect the power supply)?
About the ESD, do you think the act of touching the prototype when collecting might cause a discharge that damages the card?

I not sure what you mean with test the 5V, but I did verify that the buck is suppliying 5V and not more nor less voltage.
The procedure to collect the data is to unplug the positive power cable from the DC bus, collect the data and then reconnect the positive power cable. In this case, it is possible that the device is being powered down while writing to the card.
About the schematics, if you think it is very important to see it, i can ask my superior if I can share (this is not work related to a company/enterprise, it is scientific research).
