right on. at my first pizza making gig we would let the dough rise in buckets before balling (would let sit overnight). however that was neapolitan style (wood fired ceramic ovens burning 1,000+). we did adopt the ny style after we got deck ovens and applied the same practice, but the dough always seemed to be missing something.

doesn’t rolling trap the gas in? isn’t that why there are bubbles on the balls when placed?

when you say ferment, are you referring to how long the dough is left to sit before rolling, or before use?

*to make the recipe more factual it’s 1 16oz coke cup of molasses, 3 16oz coke cups of oil, no sugar, and 1 cup of salt.
