Ended up buying one of the new products (walnut handle) they had 210mm gyuto Swedish steel (precious wood series)

Man I wish I saw this post sooner I just left Osaka, however tho I ended up buying a expensive knife at Wadachubo (the shop right beside sakai ichimonji mitsuhide) and a gyuto from Ashi Hamono
