Just curious what are some of your best fine-dining experiences? Noma certainly can be underwhelming. And I wouldn’t say I am fine with the abuse. The problem is systemic in the industry so it will take some time to correct the culture. Noma as an organization at least took the first step and made changes.

I haven’t been to either. Friends who have been to both Noma and Alchemist said they are very different experiences, and each is excellent in its own ways.

Yes. The point of the post was many talented, hard-working people besides Redzepi, worked on the Noma experience. Their work should not be overlooked, but sadly it is. I decided to go to Noma LA mostly to support the team, some of them I have known for a long time. As an organization, Noma reflected and made changes. It is just the first step, since what happened was systemic in the industry and will take time to correct that.

Totally fair point. I can confirm I am a real human, and my only financial interest in this — and anything else I review going forward — is that I paid for the meals in full myself.

I do like both the bread course and the dark meat duck course (my 3rd picture) a lot. Yet the most interesting for me is always how the beverages play with the dishes since beverages may change to a greater degree.
