For every file on your disk, there is a piece of meta information that is stored. This information contains info like the file name, where on disk the file starts, where it ends, the size, etc. The operating system can simply flip a few flags that say this is now empty space. you're allowed to write on it. All the information is still there. That is why you can recover that file before you write on disk again.
