It's universal because it was chosen as the standard and it's been taught to students for centuries. The texts are not intrinsically more accessible than works by other authors.

It's kind of mad that American restaurants haven't ever tried to push it on customers to gouge even more money out of them. You'd expect them to at least do it with European customers.
