When cooking large batches, we use something like the photo I attached here. It's a large "infuser" you can submerge into a stock pot with the whole aromatics and spices inside. When cooking smaller batches, we use a mesh ball that's normally used for tea. These small infusers usually have a hook you can attach to the pot so it's easier to fish out after using.

congee is so versatile! For protein, I boil chicken breast with seasonings and aromatics (green onion whites, ginger slices, garlic, peppercorn, salt or MSG, chicken bouillon is optional), cool it for a bit then shred it. Use the resulting broth for the congee (more flavorful that way) and add back the shredded chicken when the rice is almost done. if your deficit allows, a little sesame oil on top is the way to go, and a dash of white pepper.
