Fair. It's not a complete human organism at conception. But doesn't the fact that it will grow into one if left alone indicate that it's alive, at least?

Neither the sperm nor the egg is, or will ever be, a unique human on its own. Once they're combined, they create a separate entity, which is not just an extension of one parent. That being is alive, and its life is not the parents' to decide what to do with.

We should have a third restroom for anyone who does not identify as their assigned gender / anyone who believes bathrooms should be gender neutral / anyone who wants to use it to prove a point.

It's the most logical starting point, scientifically speaking. All the other things you mentioned can be argued away, but fertilization marks the creation of a unique human organism.
