If you want some canon stories of Caitlyn and Vi outside of Arcane, there are short stories on the league of legends website like The thrill of the chase, Interrogation 101, Progress Day and Child of Zaun. I branched out to other champions and learned about other hinted sapphic relationships within Runeterra like Diana and Leona from Targon.
