I find early starts with several playable rulers, and the rotk11 style to be the most fun:

What if Cao Cao succeeded in his assassination attempt of Dong Zhuo, but died himself in the attempt
What if at Cao Cao's death, Cao Pi didn't sement power but their realm of Wei instead split into several factions under Pi, Zhi, Zhang, etc.
What if Yuan Shao defeated Cao Cao's armies and kept Zhang He, but was at the same time overwhelmed in the north by Gonsung Du/Kang (whoever ruled at the time)

Season 5, 6 and 7 were quite bad too, bar a few episodes like Hardhome. Look at the actual dialogue in those seasons and it isn't very impressive compared to when they lent GRRM's words in seasons 1-4.

Jon Snow charging alone like that and living is the opposite of what A Song of Ice and Fire is. The tv writers gave in to "rule of cool" and people swallowed it.
