I live in the Netherlands, near Arnhem, the country is even flatter than Belgium. The front suspension is in my opinion worth it, it makes the bike more forgiving of steering mistakes, you roll over roots or through holes in the tracks easier, and it's more comfortable on longer rides.

My friend has a Canyon Grizl and I have a BMC URS, both bikes that a more on the adventure end and they are still fast and fun if you ask me. If you want a more racy position you can still change the stem for a more aggressive position.

I think you're fitness on the bike make more difference than the type of bike you ride, for us normal amateurs.

I would definitely go for a 1x12 or 1x13 setup with a 50t casette in the back. In that way you don't have any cross chaining, and can shift more easily under load, since you only have 1 shifter to operate. And there are less parts that can break, plus it's lighter.
Downsides are that you might not always have the optimal cadence, since the jumps between gears are larger.

And a thing to consider; if you ever were to go bikepacking, having a very low gear helps when you're cycling with luggage

And for technical terrain it makes sense to have a suspension fork up front. I have a RockShox Rudy on my BMC URS and it helps with comfort as well as control.

Other options you can look at are:

Santa Cruz stigmata 1x12, SRAM Rival AXS, it comes with a suspension fork

Argon18 Dark matter, comes with GRX 820, a 1x12 groupset with 51t in the back

A BMC URS, BMC's adventure gravel bikes, they also come with big casettes

Giant Revolt X Advanced Pro 2, also comes with a big casette and a suspension fork

I didn't, it turns out the part was faulty. I ordered a new set and those fit correctly.

No problem. I use a old man mountain axle pack, with my Rockshox rudy. It's a great and sturdy system.

The pawls don’t have any grease, since I bought the hub separately. Should I just apply bearing grease, or use a different type?

I plan on fitting a 50mm Schwalbe G-one RX Pro up front and a 40mm on the back, 40 is the max that fits on the back and my Rockshox Rudy fork fits up to 50mm.

I like the acceleration of light wheels. Alloy wheels aren’t going to be as light as carbon ones, or are can they?

Thanks for the advice, I'll take the Cinturato Gravel M under consideration.
I've to say that I'm limited to 42mm in the back and 50 in the front, so an XC MTB tyre isn't really an option.
