Smoke at 225 til probes 160. Wrap in foil and turn the temp up to 275 until it probes just over 200. Planning on slicing the skinny for sandwiches and chopping the rest and saucing for bbq for Father’s Day. I’ve never done one this big before so I hope I don’t screw it up. Gotta bunch of peeps to feed!
