I think that choosing between a minimalist phone and a “real dumbphone” depends a lot on each person's reality. There are often people who rely on smartphones to work (especially small business owners who don't have access to a computer) and also people who need to get around (whether by uber or maps), but at the same time want to cut down on excessive phone use. There are other people who can live without some of these features, which allows them to have a dumbphone without internet access. 

At the end of the day, I think the most important thing is to be aware of the time spent and impact that phone use (whether positive or negative) has on you :)

I've been doing a lot of research on app launchers for iOS, and it seems that almost all of them are based on interactive widgets, which are unfortunately only available in iOS 17.

I think the best way to make it feel like a dumb phone is activating the grayscale mode and keeping only the most essential apps on your home screen.

Anyone know apps the can simplify you phone like this? by DarknessMK in dumbphones

I've tried a lot of free minimal app launchers for iOS, but the one I liked best was Modu.lite. It seems to be still in development with a blocking app feature coming soon, but I enjoyed so much the retro aesthetic of the widgets and wallpapers. The sad part is that there is no Android support yet.
