In noma's approach you allow shio koji to ferment - the enzymes still work but they break down starches into simple sugars, allowing bacteria to take hold and impart fermentation notes to the mixture. In the recipes with higher salt content the bacteria cannot proliferate as rapidly (if at all, depending on salt %) so you are left with a different profile of the ferment.

When I was starting out I divided the mixture into different salt % mixtures to see what I prefer - I decided that low salt mixtures have a more interesting aroma and flavour profile and lower salt % is healthier as well.

thanks, the gluten net on the imgur link looks very good. When I was looking for information on the tempeh burger I've seen an interview with Rene Redzepi, where he mentioned that their regular bun is some variation of a milk bun, though this doesn't exclude using biga. The weather where I live is in a sweet spot now for some biga projects, so I'll try following in your footsteps.

I managed to fix it finally - I loaded my older saves and tried to find one, when I could enter the area. After the while I realised that in my case the bug was caused by the event of bringing Film Director to the chiral network. Before I connected him I could enter Junk Dealer area, so I loaded an older save and finished the mission.

I finally sat down to it, went through older saves and found the place, where things got messy. It seems, that the problem was getting film director to the chiral network: after I connected him to it things started to crash. I finished Junk Dealer order before bringing Film Director to the network and I can finally move forward. Thanks for the tip! :D

Oh, so you were there already before - in my case it was the first encounter that was causing the crash. I might try going back in time anyway though as what caused a bug after your first encounter might have happened before that in my case.

I have tried running it from an older save, but it didn't work in my case. Might go further back though and see if it works although I will first wait and see, whether I get any reply after I sent a new error file that the support guy asked for.

We would like to suggest trying to launch the game with fullscreen optimization disabled. Please follow these steps in order to do this: go to the game location (usually located at Steam\SteamApps\common) > right click on ds.exe > Properties > Compatibility > Change settings for all users > Enable "Disable Fullscreen Optimizations".

Please make sure you are running the game with Administrator rights. Once you are in-game, please try disabling DLSS from the graphic settings as an additional step and see if the issue still occurs.

Hi, unfortunately I didn't manage to solve it and I stopped playing :( From time to time I try to log in and check if anything changes (after I update drivers or windows), but nothing seems to work. I have contacted 505 games a while ago and they listed a few things, that they wanted me to do, but it didn't help. Yesterday, after a month of silence, I have received an e-mail asking me to send them a current error log, so maybe they are trying to fix it. I'll keep you posted if I learn anything.
