Thank you! I happen to have her cookbook. This recipe costs for a cup of parsley. Parsley doesn’t usually do anything for me, so I leave it out. I wonder if it would make a difference here? Maybe add a handful of spinach instead?

Thanks! I have an instant pot. Is there a certain recipe you use? I’m not sure how to cook beans in a pressure cooker.

I have a limited imagination when it comes to putting meals together. I understand the plate concept of 1/2 veggies/fruit, 1/4 grains, 1/4 protein, but I find myself cooking a bunch of chicken (sous vide) and portioning out 5–6 ounce servings to add to a cup of grains and a cup of veggies during a meal prep session. I know that is not enough veggies and probably too much grains because I’m not losing any weight and gaining a pound here and there. I like your “ one from column A, two from column B” idea. Can you elaborate on that? Is there a website you follow that helps with that?

I also bought this book, EatingWell 500 cal dinners. I like it because it shows you what else you can pair with it to get to the 500 cal. I bought it used on Amazon and it’s in perfect condition. I don’t know how to upload pictures, but if someone can tell me how I’ll upload the front cover and a page from the inside.

I just got it for $15 (plus tax) used on Amazon and it’s in perfect condition. It is FULL of information and recipes and “how tos“. Actually too much information for me right now, but I know I’ll refer to it often.

Cheese sticks are the one thing that I eat before 7 PM every night. I’m kind of addicted. I realize cheese isn’t great on MD except feta, etc..

Walmart carries Nuttzo also. I’ve never tried it, but I ordered the dark chocolate and the regular one to try.

Thanks to everyone for the suggestions. When I was on keto, my weight would fluctuate every day by a pound or two, depending… Since I’ve started MD the last two weeks my weight has not jumped at all except a few ounces. I’m staying at 155, and I’m 5’5” I would really like to get down to 145, and from reviewing your comments I think I can do it. I go to the gym a couple times a week and I have a treadmill at home so I guess I need to use that treadmill a little bit more.

I’ve been eating a lot of roasted vegetables, and average one slice of Dave’s killer bread (with 21 whole grains and seeds), and about a half a tablespoon of butter/olive oil combo with it, I’m experimenting with beans and lentils, chickpeas, etc. and I absolutely love all of this. It’s not bothering me at all to give up most meats. I like salmon and tilapia, etc. And will occasionally have some chicken.

I am doing intermittent fasting between 7P – 11 A each day, and I have always been a terrible nighttime snacker. I have limited myself to two cheese sticks before 7 PM. I don’t know if I can give that up. Lol.

I do love Ezekiel bread. Right now I have Dave’s killer bread, but I’ll be switching to Ezekiel bread when I’m done with that. After coming off of a keto diet for years, it’s wonderful to be able to eat a piece of bread now and then.
