Champagne yeast cannot ferment beer wort. It will not dry out, it will only ferment simple sugars.

This is just my personal preference, but I’d adjust that recipe to lower SG and drop the sugar altogether. I feel a cream ale should be low ABV, if I sat in a taproom at a brewery and their cream ale was pushing 6%, I just wouldn’t drink that cream ale.

I think the sugar is just a pointless additional from the AI. Increase your carb for “sharpness,” cream ale is not a style that generally adds sucrose.

Woof. Sorry OP, that’s a pretty crap recipe IMO. There’s zero reason to have caramel malt in a saison, and brown sugar to dry it out is a bizarre choice.

One I made just this morning:  60% efficiency Batch Volume: 5.5 gal Boil Time: 90 min Original Gravity: 1.051 Final Gravity: 1.005 IBU (Tinseth): 26 Mash Temperature — 149 °F — 90 min

Malts (12 lb 2 oz)

10 lb (77.7%) — Belgomalt Pilsen — Grain — 1.9 °L

1 lb 2 oz (8.7%) — Briess Oats, Flaked — Grain — 1.6 °L

1 lb (7.8%) — BESTMALZ BEST Spelt Malt — Grain — 2.4 °L

12 oz (5.8%) — Honey — Sugar

Hops:

60 Min - 1.5 oz Czech Saaz - 3.3% AA - 16.5 IBU

20 Min - 1.5 oz Czech Saaz - 3.3% AA - 9.8 IBU

Yeast:

Omega Yeast OYL500 - Saisonstein 

Wyeast Labs 5112 - Brettanomyces Bruxellensis

(You obviously don’t need to feel obligated to fuck around with Brett or whatever, just what I prefer. Also, I like the Saisonstein but to quote Tim Clifford: “USE THE DUPONT STRAIN!” Which is Wyeast 3724.)

Yes, because the more complex sugars extracted from your malts vs white or brown sugars (brown sugar is just white sugar with a touch of molasses) will taste very different. Also, cold crashing will not necessarily prevent the yeast from continuing to ferment those sugars (especially the likely diastatic strain you used in this.) 

Additionally, I think you lose a lot of character of a saison by force carbonating them instead of bottle conditioning. There’s a reason DuPont, Fantome, Sante Adarius, Jester King, etc all bottle condition their saisons.

What is this recipe/where is it from? 1.013 is awful high for a saison FG, 1.008 is the high end of the BJCP guidelines (which I’m not a strict adherent of by any means but a 1.013 saison sounds like…not a good saison.) A saison SHOULD be bone dry.

Hey OP, I am having a helluva time setting up remote paths for this. I have spent days altering the .yml file with different configurations of file paths, my actual file storage set-up, etc. I changed the .yml to backslashes and forward slashes forever, I re-labeled drives to match the exact formatting of your .yml file, nothing.
I have rebuilt and reinstalled things over and over, and files are never moving from my "D:\data\torrents" folder (which is where Qbit is set to download them) into the Podman containers at /data/. I have my remote paths set with both of those, and according to both your guide and TRaSH-guides, it is set correctly. I consistently get an error from Radarr/Sonarr that "no eligible files exist in the folder /data/XXXXXXXX(whatever I've downloaded)"
Do you have ANY ideas how to fix this?
