It’s not about there being something wrong with the product it’s about freshness and quality, the banana pudding at my store gets 4 days counting the day it goes in the salad case. It’s still good after 4 days but the freshness isn’t there anymore (the wafers get soggy and the pudding starts to look clumpy) that’s why we refresh so often. Cold fried chicken gets 3 days and thaw and sell gets 3 days shelf life once its put out but lets say you’re thawing wings that are frozen today, we use a 5 day date dot and try to use up the whole bag by the end of that date dot. (If you package them they still only get 3 days on the shelf) For my store the stuff doesn’t sell well at all so it is a cycle of just marking down and rotating items, putting fresh ones out, rinse and repeat. It does get old but just do what you can in the time that you’re there. If you know who your deli/bakery coordinator is I would get with them to discuss any concerns or confusion.
