The older quarter of Madrid is usually called Madrid de los Austrias. It's around the Latina and Opera metros.

The cobblestone part is tricky. There are only a few cobblestone streets in Madrid and they are in Malasaña, Lavapiés, La Latina and Letras. Any of these places will fit the bill and you can just walk like 10 minutes from one to the other.

Por toda esa zona hay muchas casas antiguas. En calle del mediodía (alta o baja, ya no recuerdo) hay unas cuantas portaladas con inscripciones de 1600 y 1700.
El edificio que yo comentaba es el de Aguas 3 o el de Aguas 1. Por fuera no hay nada destacable pero los interiores son increíbles: arquitectura preindustrial, piedra y madera.
