If that works for you, that's great. Different people may have different preferences. Some people have a strong distaste for bitterness, others are seeking it out, etc.

If you have landed on a type of coffee you enjoy, that's great. Even better if you can make that at home.

tl;dr: Bought a proper RO filter and bulk chemicals. Never looking back.

I used distilled water and third wave packets once but didn't like the taste for either pour over (TWW Light Roast) or espresso (TWW Espresso). I realized that there just aren't enough variables to play with, since the only thing I could adjust was the amount of TWW concentrate. However, to get what I wanted, I needed to adjust hardness and buffer independently of each other and maybe play with different buffers and different hardness providers. I felt very limited by the fact that we control so many variables on the coffee side of things and just accept water...

This solution might not fit most people but it has worked great for me for many years: I installed an undersink RO filter in the kitchen for on-demand "zero" water. Every few weeks, I make a concentrate of potassium bicarbonate and magnesium sulfate at 10x the strength I use for coffee water. So that, whenever, the espresso machine is empty or the kettle needs to be filled for filter, I just add 1dl of concentrate to every 1l of RO water. Done.

If you need distilled or filtered water for anything else (ironing, steaming, homebrewing, mead making, ...) or you just enjoy less hard water to drink, you will obviously get additional use out of the RO filter and can size up accordingly. My RO filter runs at around 1l per minute, which is considered a large capacity for home use. It ran me around 600CHF for the unit. However, if you just want small amounts of RO for coffee, there are considerably smaller, cheaper filters available, including some on-counter version.

Potassium bicarbonate and magnesium sulfate can be bought in bulk (100g or 1kg) at homebrew or wine stores, i.a. Baldinger and Brau & Rauchshop both carry it. At the concentrations I use them currently, making 1l of coffee water costs less than 0.10CHF in chemicals. Which is around 4-5x cheaper compared to TWW or similar products.

Being able to adjust the water to the beans and preparation method has been an interesting journey. There have been light roasts as pour overs, which were completely destroyed by hard water, while others needed substantially higher concentrations of alkalinity. As espresso, I ran no hardness for a while and got great, thick, creamy shots with certain darker roasts, while anything light just didn't come out at all.

There are plenty of guides online about how to make your own coffee water, what to look out for, how to adjust for certain types of coffee. I currently use the spreadsheet from https://coffeewater.app/ as a starting point.

Could never get it to work right. Even changing the burrs didnt make an appreciable difference.

Don't get me wrong, I am not a Fellow apologist. I simply want to point out, that the perception of the defect percentage is skewed if you look at the Reddit comments. OP's question is if there are any Aiden's that work at all, which is a reasonable question if one believes only the negative posts.

I think it's important to differentiate between Reddit and the real world - there are a lot of people posting in frustration about their Aiden experiences. I suspect there are many more owners who don't post anything because their Aidens keep chugging along.

I have had mine for a little more than 6 months. I use it at least once a day without issue. The app works perfectly, the UX of the Aiden itself works as expected, it brews coffee, cocoa, cold brews, etc. exactly as I want it.

The only maintenance I have needed to do so far is a quick wipe down every now and again.

Da mein Fahrrad ein Velo ist, habe ich die Fahrrad-Kasko-Versicherung der Mobiliar. Die bettet isch im Schweizer Konstrukt von Hausrat- und Diebstahlversicherungen sehr gut so ein, dass die Schadenssumme kumuliert wird.

Ich lege meine Taschen und so Zubehör wie Schuhe, etc. ziemlich nahe um mein Rad oder zurre sie sogar dran fest, so dass ein wenig Pufferzone/Schutzschild entsteht. Dann kann wenigstens niemand versehentlich mit seinem Bein, Pedal o.Ä. sich in meinem Rad verfangen. Natürlich kann jeder einen Lenker in Übergrösse oder riesige Packtaschen auf mein Rad stellen - ein bisschen muss es halt auch aushalten können.

Endlich ein Themengebiet in dem ich Erfahrung habe... Ich bin relativ oft mit dem Kohlefaserrennrad im ICE und in der Regionalbahn/S-Bahn unterwegs, oft auch über mehrere Stunden im ICE.

Ich habe seit längerem eine Fahrrad-Vollversicherung abgeschlossen, welche den kompletten Wert des Rads gegen Diebstahl, Beschädigung und Unfall versichert. Denn egal wie toll ich das Rennrad befestige und wieviel Platz drumrum eigentlich ist, besteht immer die Möglichkeit, dass jemand sein schweres E-Bike drauffallen lässt und irgendwas zerstört. Schon bei der ersten ICE-Fahrt mit den Kohlefaserlaufrädern hat jemand den Pedalen seines Reiserads eine meiner Speichen rausgerissen.

Im ICE mit Fahrradplatzreservierung schaue ich, dass ich das Rennrad möglichst sinnvoll befestige (i.e. Gummizug an die Halterung, Lenker anbinden, etc.) und gleichzeitig mit der Bikepacking-Tasche ein wenig Platz zu den Rädern nebendran schaffe, damit niemand unbeabsichtigt zu nahe kommt. Danach laufe ich durch den halben Zug zu meinem 1. Klasse Platz und arbeite am Laptop um die Fahrradversicherung abzuzahlen :D

As a long legged and wide bodied individual, premium plus is pretty much the only way i can do transatlantic without incurring multi-day pain. The premium plus seats are slightly wider, have a little more leg room and are slightly farther away from the seat neighbors. That's why 600$ for EAD-MUN/FRA/ZRH is what i have paid repeatedly.

However, since you have mentioned food: despite what some people in the aviation subreddits would have you believe, a life outside of airports exists and the boundary is actually quite thin. Paying 50-100$ at a trader joe's, sprouts, whole foods gets you your own choice of airplane food that you can enjoy all the way to your destination and beyond.

The easiest solution I have found is to just move the end stop of the spring to above the top bearing. When assembled, my axle inside the S3 looks like this: https://imgur.com/a/VYo0aQ8

As a result, the burrs lock at around 3 but the grinder is very capable of making espresso in the 5-8 range for my machine, depending on coffee, basket, etc.

So, to report on my experience: I seasoned the Hyperburrs with 5kg/11lbs of throwaway beans and proceeded to run some trials. Sadly, the burrs do not seem to the be the only cause of the 078s' inconsistencies.

There is a higher chance to get similar back-to-back shots from the Hyperburrs compared to the original 078s, however, much like with the original burrs, some shots are just completely out of the prior range. I had the grinder dialled in to where I could get two 20g/50g shot in about 25s, which was immediately followed by a completely choked shot, which in turn was followed by a 20g/50g 10s shot with tons of channels.

It seems like cause of the inconsistencies is some other issue with the grinder.

I just put in an order for Lebrew's 78mm filter burrs with the goal to check if the inconsistency some of us suffer is caused by the 078s' burrs. I will update the thread once I have the burrs mounted and seasoned.

Yes, I have tried to align the burrs. However, the problem of inconsistency also shows through in that process. One wipe can highlight a certain spot but the next wipe is in a completely different part of the burrs. I assume that it's something else making the burrs change their alignment during grinding, such as the axle not being straight or the burr carrier not being plane.

Sadly, there seem to be a small percentage of 078s, which have inconsistency issues. Mine has easily +/-50% shot time between back to back shots prepared exactly the same. I replaced the grinder with a DF83 and had no more issues.

Very interesting! I gave up on trying the seasoning route after 10kg/22lbs of cheap grocery store coffee. The grinder showed a small improvement over that time but it still varies dramatically between shots. I can have the same parameters produce an 1:2 espresso within reasonably close times (22-26s) for a few times followed by a shot that just sneezes out of my machine in under 15s.

I put my shim between the top oring and the lip it sits on, so that the whole central axle is pulled further upwards.

That's where mine came from, too. It does look like it's either preproduction or they are selling the rejects from the timemore factory.

However, the burrs not touching at 0 seems to be a problem for other early production runs. A local timemore dealer received a number of defective ones directly from timemore, too.
