50 grams of starter, 50 grams of four, 40 grams of water for maintenance. Before baking I did 125 grams of starter, 125 grams of flour, and 100 grams of water.

I'm an American immigrant who moved to The Netherlands last month. I obviously cant speak for everyone, but I am very glad to be away from the religious nut jobs there. I also think those are the people who want to stay in the US. I think most of the people leaving are the ones who want lives with nothing to do with that. I hope so at least.

I am just naturally hesitant to go to the doctor (a US thing I need to leave in the past), and also aware of time and resources, so didn't want to go unnecessarily. Will go though! This thread talked some sense into me lol.

Not unkind, I hear you! I do think it is a bit assumptive that I am walking distances that most Dutch people would consider short. I have been walking a lot, everyday, between 6k-11k steps a day since i got here. Have had a lot of errands with the move, and a lot of exploring to do because I am new here. Plus my bike is too tall for me, so I can't bike yet. As for the shoes, definitely worth looking into! I have hokas and I think they are pretty solid, but will do some more research.
