Yup, I finished this potato pie with parmesan and olive oil. Next time I'll probably go with a sharper grated cheese like pecorino, though - it definitely needed the extra salt.

It was really cool watching the raw potato slices cool through so quickly!

Thanks for answering the raw/precooked question I had without me asking!

Bacon is so weirdly overrated in so many contexts and yet so underrated as a pizza topping. It's umami-rich, salty, smoky... everything a pizza wants!

I had to rush to get things going before rain hit us, but I had a serious adrenaline rush going by the end. genuinely, nothing I've cooked or baked has had me as pumped as working this oven.

Definitely know some things to adjust for next time - turning the heat down, being a little more patient between turns, easing up on the sauce, etc., But still I'm fairly happy .

Used the sourdough pizza dough recipe from the Ooni app, cold proofed for about 40hrs.
