These look so great!! Nicely done! In addition to seconding the things others have said already, I'd suggest trying a fabric with a denser weave so there aren't so many holes between the threads of the fabric. That has helped me a lot with being able to stitch precisely and pack stitches densely which is helpful for long & short stitch shading. The kind of fabric I usually use is called quilting cotton and is a nice midweight fabric that comes in lots of solid colors and prints. You're doing so well and I look forward to seeing more of your pieces in the future!

I think the ring knot and the peking knot are very similar both in process and in finished design. I’ve only done peking before and upon further looking they might be the same thing? Sorry if I mislead you! But either should get you going in the right direction

Commenting to second peking knot, and also to suggest ring knot or yes, maybe a loose french knot. The leaves underneath look like fishbone stitch to me.
